연구실 소개
식품학 연구실은 채소 등의 천연물 또는 기능성분의 대사질환 등 질병 예방 효능 및 작용기전을 연구합니다. 이를 위해 세포 및 다양한 동물(mouse) 모델을 활용하며, 분자생물학실험, 기기분석, 오믹스 기법(RNAsequencing, Proteomics, Metabolomics, Microbiomics) 및 바이오인포매틱스 등 다양한 방법을 적용하여 연구합니다.
My laboratory focuses on the disease prevention efficacy and mechanisms of action of natural substances (e.g., vegetables, functional bioactives) particularly in metabolic diseases. To achieve this, we utilize cellular and various animal models (mice), and apply a wide range of methods including molecular biology experiments, instrumental analysis (e.g., chromatography), and multi-omics techniques (RNA sequencing, Proteomics, Metabolomics, Microbiomics) along with bioinformatics, to conduct our research.

My long-standing research interest has been preventive effects of various edible sources against various metabolic disease risks [e.g., alcohol-related liver disease (ALD), NAFLD, pulmonary damage, colon cancer]. For instance, ALD is a complex pathological process that includes various liver lesions such as steatosis, fibrosis, and cirrhosis, and these conditions account for nearly 50% of liver disease-related deaths. Chronic alcohol consumption leads to the production of excessive reactive oxygen species (ROS), with alcohol metabolites depleting GSH levels and causing ROS-mediated liver damage, a key aspect of ALD. Related, , I found that protective mechanism of Korean green plum against ALD, and identified a major bioactive (i.e., chlorogenic acid) responsible for the protective mechanism. In follow-up studies, key metabolites of the Korean green plum extract were profiled in mice serum treated with alcohol, which might protect against ALD. In addition to these liver conditions, ALD is also linked with gastrointestinal issues like colitis and an increased risk of colorectal cancer, highlighting the interconnected nature of liver and gut health. Supplementing with natural antioxidants to eliminate ROS could be an effective and economical preventive strategy for both liver and intestinal health issues, leading us to explore candidate bioactives from edible sources. Currently, I am interested in elucidating molecular mechanisms by which lifestyle risk (e.g., alcohol, dietary sugar) or genetic factors can impact colon cancer risk, and also interested in natural substances (e.g., vegetables, fruits, edible plants) that may reverse the aforementioned risk.
